Panorama Tools
Excellent set of open source programs for assembling individual photographs into panoramas. You can do straight images as well as QTVR and Java based interactive viewers. Available in MAC, Windows and Linux versions

Also, there is PTLens - this is a plug-in for Panorama Tools that allows you to correct for lens distortion (barrel and pincushion) This is available in Windows only
