Stuff...

The brisket was awesome -- I loves me my Traeger. Got enough for a bunch of meals so will cryovac half tomorrow. The sauerkraut is coming along nicely -- got some strong signs of fermentation and it smells good and clean -- lots of bubbles when I push down on the weight. More than an inch of brine above the plate. I am happy with the crock that I bought in Rapid City but I should have gone bigger.
